Summer Lovin’

Summer is definitely here is Kentucky! It is supposed to be 99 degrees this week! Ughh! I don’t  do well in heat, I am not one of those girls who never sweats and always looks perfect no matter how hot it gets. I step outside and I look like I jumped in a pool and let me tell you it’s not pretty! May have a little something to do with those two precious babies because I don’t always remember it being this bad!

Regardless, I love summer! I love all the things that come with summer! One of our favorite things to do is go to our local drive-in. Oh yeah, we still have one! You should be jealous too because it beats sitting in a stuffy theater any day! We basically have going to the drive in down to an art now.

This past weekend the drive-in was playing the new Disney Pixar movie, Brave and they also were planning on having inflatables for the kids to play on before the movie started. Like I said, “We got this,” when it comes to the drive-in, so we took our truck and parked it front and center as soon as the theater opened. Then we left and did our normal Friday night stuff, dinner & Walmart. Yeah, I know really exciting!

Needless to say Disney didn’t disappoint and we all really enjoyed the movie. I have always loved Disney movies, even now. I do miss the songs though, this one didn’t have any but in the end they always teach a good lesson.

Another thing I love about summer are cookouts! I love that in the summer you can have a cookout for no apparent reason and no one questions it! I love to cook (and love to eat) so it’s obvious why I love a good cookout. In fact, we have one tonight at my in-laws and although my MIL insists that I don’t bring anything, I just can’t go empty handed. It must be that southern girl hospitality in me! Therefore, I thought I would share the summer inspired recipe to what I am bringing tonight.

Since everyone loves ice cream (especially in this blistering heat) I found a new recipe that gives a new twist on ice cream.

It is called Strawberry Cheescake Ice Cream:

1 pkg (8 oz) Philadelphia (it’s their recipe) cream cheese – softened

1 can (14 oz) sweetened condensed milk

1/3 cup whipping cream

2 tsp lemon zest

1 1/2 cups fresh strawberries

3 Grahams crackers – chopped

1. Mix the first 4 ingredients with a mixer until well blended. Freeze 4 hours.

2. After 4 hours, beat cream cheese mixture with mixer until creamy. Blend strawberries in a blender until smooth. Add strawberries and graham crackers to cream cheese mixture. Freeze 8 hours.

3. Remove 15 minutes before serving

Cheesecake is one of my favorite foods ever so I had to try this recipe! I gave it a taste test this morning it turned out pretty good. We will see what everyone else thinks tonight! The 4th of July is soon approaching, this would be a great dessert for your independence day celebration! Hope everyone has  wonderful week.
